Lobster & Prawn Pasta

  • 300g lobster (or crayfish) tail meat cut into bite-sized pieces
  • 6 raw tiger prawns shelled and chopped
  • 2 garlic cloves, minced
  • 1 Tbsp butter
  • 1 large chilli de-seeded and sliced finely
  • 2 Shallots, diced
  • 200ml Sparkling wine
  • 2 sprigs of Thyme
  • 2 cups spaghetti, cooked to packet instructions
  • To serve;
  • 1 Lemon
  • Pinch of Tasman Sea Salt

Step 1 For the sauce, place pan over a low to medium heat. Add in prawns, garlic, butter and toss together. Add in chilli and shallots, stir and saute for 5 minutes.


Step 4 Add lobster and wine and reduce down to roughly 100-150ml. Add thyme and spaghetti and toss all ingredients together


Serve with a drizzle of fresh lemon juice and a pinch of sea salt.
