Spicy Christmas Salmon with fresh summer salad

  • Spicy salmon
  • 1 tablespoon cooking oil
  • 6 long chillies thinly sliced
  • 6 garlic cloves thinly sliced
  • 2cm ginger thinly sliced
  • ¾ cup sugar
  • 1 Side Fresh Salmon
  • Fresh Summer Salad
  • 10 cherry tomatoes halved
  • 1 mandarin segmented
  • 1 small grapefruit segmented
  • 3 x thinly sliced radish
  • 1 x cucumber de-seeded and thinly sliced
  • 200g baby spinach
  • Small bunch coriander

Step 1 add oil to a small saucepan, add chillies, garlic, ginger and pinch of salt and cook on high heat for 4 minutes. When cooked through add sugar and ¾ cup water cook on medium heat until half the volume.


Step 2 Place Salmon on baking tray. Baste with chilli sauce bake in pre-heated 160 degree oven. After 10 minutes take out of oven and baste again. Return to oven for 10 minutes


Step 3 To serve cover Salmon with the rest of the chilli sauce.  Toss all salad ingredients together scatter on top of salmon.
